Sweet Potatoes

I truly feel sweet potatoes are one of the superfoods of the world. There are many foods that we are told are healthy for us, so we eat them because intellectually, we know we should. i’m more of a full body girl ~ like i have to feel it & everything needs to be & is visceral for me. yes, sweet potatoes are loaded with beta carotene ( vitamin a ), vitamin c & fiber… but more than anything, i can feel the benefits of this grounding magical food every time I eat a sweet potato. regular old sweet potatoes can get old ~ so i make them twice baked ~ with amazing European butter, organic egg & fontina cheese…thyme & shallots. pair with my caesar salad & you have the perfect week night meal. it’s so important to feed our souls & nourish our bodies. the world deserves our light. always eat in love too. oh, one more thing ~ they are wonderful for balancing our blood sugar…
